Regular knife maintenance is important to keep your knife sharp and safe. A sharp knife is safer to use than one that has gone dull as it requires less pressure to cut, meaning the knife is less likely to slip and is easier to control. A sharp knife is also less tiring to use than a dull knife and makes cleaner, more accurate cuts.

There are three ways to sharpen and maintain your knife. You can use a set of steels, a whetstone or a pull through sharpener, and we'll show you how in the guides below.

DIAMOND AND HONING STEELS

You'll need both a diamond steel and a honing steel. The diamond steel resharpens a blade that has gone dull and the honing steel will maintain the sharpness of the cutting edge. If your knife is dull you won't be able to resharpen it with just a honing steel. The technique is the same for using both a diamond steel and a honing steel.

PULL THROUGH KNIFE SHARPENERS

Using a pull through sharpener is a great alternative to knife sharpening with steels, especially in the domestic kitchen. The technique is easy to master as the sharpening angle is set for you by the modules within the sharpener. Never use a pull through sharpener on serrated or Japanese knives.

WHETSTONES

Whetstones are used to sharpen and maintain Japanese knives. A whetstone with a coarse grain is used to remove nicks and irregularities in the blade, with medium and fine grain stones used to sharpen, hone, polish the cutting edge to an acute angle of sharpness.
