If you have questions about our Fresh & Save products, then you’ve come to the right place. We have compiled useful information about our products and how to use them.  


General Questions

The longevity of the food depends on many factors such as the initial germ count of the food, adherence to the correct storage and cooling conditions, and the required hygiene practices during preparation and vacuum sealing. The ZWILLING Culinary World app calculates the estimated longevity based on the following factors: Food group (e.g. fresh beef or fresh vegetables) and storage location (e.g. fridge, freezer, or cupboard). The calculated longevity is generally always a non-binding guideline.

Food must always be allowed to cool to at least room temperature before the vacuum sealing process; vacuum sealing warm food is generally not advised. The FRESH & SAVE products do not possess any insulation; therefore they do not keep food warm.

All the components used to make FRESH & SAVE are food-grade and checked for harmful substances.

⁠Vacuum sealing is not a replacement for the correct freezing, cooling, or preservation of food. Depending on the food type, the standard storage and hygiene practices should be observed.

Vacuum sealing significantly reduces the amount of air, thereby markedly lowering the oxygen content and delaying oxidisation and aerobic processes. Food thereby spoils more slowly. Moreover, the minimal amount of air that is still present is unable to transport moisture to the surrounding environment, thereby preventing freezer burn and preserving the flavours, such as those of herbs, for longer.

The less often that a food comes into contact with air, the longer it remains fresh. When regularly opening a box or bag, it should be vacuum sealed again as quickly as possible after the food has been removed.

The QR Code connects your food with the ZWILLING Culinary World App, which gives you a better overview in your fridge and freezer. By scanning the QR code on the lid of the vacuum box or on the vacuum bag you link your food to the app. Now you can simply track your stored food in the app. When the shelf life of stored food is due to expire, the app sends a reminder in good time, helping to avoid food waste.

There is food which is not suitable for vacuum sealing.
Some raw vegetables release gas which can reduce the vacuum inside the box or bag. E.g. cabbage, beans, onions and garlic. In order to avoid this it is recommended to blanch them before vacuum sealing. Blue cheese should not be vacuum sealed. Fresh mushrooms only deep frozen.
 


Vacuum Pump

The pump has been specially designed for the Fresh & Save vacuum system. This is the only way to guarantee optimal vacuum sealing results. 

It is not possible to change the battery but to charge it with the USB cable, included in the packaging.

Both the vacuum pump and the battery are covered by a 2-year warranty.  

No. The pump is powered by its battery and charged using the included USB cable.

The pump is not permitted to suck in liquid! Immediately stop the vacuum sealing process as soon as you notice any liquids being sucked towards the pump.

No. Because of the battery, the pump is not permitted to be cleaned in the dishwasher. You can simply wipe the vacuum pump with a damp cloth. The silicon attachment can be removed and cleaned under running water.

The charging process can take between 2 to 5 hours, depending on the charging device. E.g. it takes longer to charge the pump using a laptop than using a regular charger.


Vacuum Containers

The boxes are made for long-term contact with food and are checked for food safety and harmful substances.  

Yes.

No, the plastic boxes are not suitable for use in the oven. The box and lid are heat resistant up to 97°C.

All the boxes and lids may be used in the microwave. However, it is important that you first release the vacuum from the boxes. For oily food we recommend to use the FRESH & SAVE glass boxes.

It is an exceptionally heat-resistant glass that withstands both hot and cold temperatures. High temperature fluctuations should be avoided.

No, to prevent thermal shock, the containers may not be placed from the cold into heat.

The borosilicate glass is very heat resistant, which allows the glass boxes to be cleaned at all temperatures in the dishwasher.

No.

In some instances strong food colourings, such as those from beetroot or turmeric, may leave behind traces of colour.

In principle, yes. However, it is possible that, for example, powerfully flavoured marinades may leave behind traces of odour. These can be eliminated by cleaning with vinegar and then washing again by hand or in the dishwasher.

Yes, the boxes need about 1 to 2 centimetres of space from the top to allow the lid to sit properly and prevent the contents from coming into contact with the valve.

The specially constructed box lid also serves as a vacuum indicator. If the lid is sunken, a vacuum exists inside the box. If the lid is slightly raised, the vacuum should be refreshed.
Boxes without an indicator, e.g. lunch boxes cannot be opened under vacuum. If the lid can be opened without much effort the vacuum should be refreshed.
Particularly when storing food long term, it is recommended that you check the vacuum from time to time, such as when produce like Parmesan is kept in the fridge.
 

With vacuum products, particular care must be taken to ensure that they are clean. Because if a seal is not completely free from interfering particles, the tightness can be impaired and it can lead to a loss of vacuum. This can be caused, for example, by small crumbs or leftover food. For this reason, the seal should be checked for contamination before each use.

Since residues could collect in the gaps over time, we recommend disassembling the lid from time to time and cleaning the components separately from one another. The lids need to be given a particularly thorough cleaning. We show you how to dismantle a lid into its individual components in the instruction video at the following link.

Tip: Cleaning is most effective in the dishwasher.

If your lid does not hold tight even after thorough cleaning, please send the lid to us for analysis. We will check the cause of the leak and send you a replacement if necessary.

Despite strict and constant quality controls, based on your description, we cannot rule out that your lid has a material or production defect. Please send us your defective cover so that we can analyse the cause more precisely.

We will send you a replacement lid immediately.

Please note that we have changed the design of the lid. Therefore, you will find a different rib structure on the underside of the lid than on your current lid.
 


Vacuum Bag

In the event of tears or loose components, such as the closure no longer correctly sealing, please discontinue use. You can use the bags until you notice that they no longer correctly close or if they fail to maintain their vacuum. If the pump no longer stops automatically, this can be a sign that the bag has a hole or that it no longer correctly closes.

After thoroughly washing with hot water and detergent, the vacuum bags must be well dried. They can then be reused. It is possible that, for example, powerfully flavoured marinades leave behind traces of odour in the bag or that food may colour it.

This depends on individual use.

Yes, the bags may be used in microwaves to heat their contents, as long they are not oily. For oily food we recommend to use FRESH & SAVE glass boxes. Please ensure to release the vacuum first.

No, the bags are only suitable for use in microwaves and for sousvide cooking.

No. This may damage the structural integrity of the bags.

Yes, the bags are suitable for liquids. The following tips may help:

• Slightly freeze the contents beforehand

• Hang the bag over the edge of the table so that the liquid does not reach the valve.

• For smaller amounts of liquid, such as marinades, use the marinating aid.

In principle, yes. However, it is possible that, for example, powerfully flavoured marinades may leave behind traces of odour.

It cannot be discounted that strong food colourings, such as those from beetroot or turmeric, may leave behind traces of colour.

The bags should be filled no higher than just below the valve.  

Yes, small portions in vacuum bag size S can be heated up in the ENFINIGY Electric Kettle Pro at a maximum temperature of 80°C.

When using the vacuum bag, there are some points that must always be observed. It can happen that you forget something. So please always remember the following points:

- Take care when packing pointed or sharp-edged foods such as bones or the like. These could possibly damage the bag film by making small tears or holes.

- When filling the bag, make sure that the sealing strip always remains clean. Even the smallest crumbs can cause a leak, as the closure would then no longer be able to seal properly.

- When closing, make sure that the zip fastener is completely closed. To check, slide your finger over the locking strip again with a little pressure.

- Very important: After each vacuuming process, press the PUSH button in the middle of the red silicone valve down firmly to close the valve.

- When handling and storing, make sure that the bags are not kinked in the area of ​​the zip fastener and that there are no sharp objects nearby that could damage the bag film (e.g. in the freezer or when storing empty bags).

The maximum life time of the vacuum bag depends heavily on the individual use and handling. For this reason, we cannot give any precise information about the frequency of use. But we have a few tips on how you can use the vacuum bag for as long as possible:

- When handling and storing, make sure that the bags are not kinked in the area of ​​the zip fastener and that there are no sharp objects nearby that could damage the bag film (e.g. in the freezer or when storing empty bags).

- Careful cleaning by hand: Here, too, make sure that the bags are not overstrained and kinked in the area of ​​the closure strip.

- Take care when packing pointed or sharp-edged foods such as bones or the like. These could possibly damage the bag film by making small tears or holes.

There are also points during use that must be observed so that the vacuum function of the bags is not impaired:

- When filling the bag, make sure that the sealing strip always remains clean. Even the smallest crumbs can cause a leak, as the closure would then no longer be able to seal properly.
- When closing, make sure that the zip fastener is completely closed. To check, slide your finger over the locking strip again with a little pressure.

Please note that the vacuum bags are wearing parts that should no longer be used over time. The gentler the handling, the longer the life of the bag. If she finds that the bags are no longer holding the vacuum, it is time to use a new bag.

Vacuum Wine Sealer

It is generally suitable for all beverages, juices and even oils and vinegars. However, it is not suitable for carbonated liquids.

The wine sealer fits all bottle necks, standardised by the European norm (17–19 mm inner diameter). This norm is usally applicable in overseas countries as well
 


ZWILLING App

Yes, once the ZWILLING Culinary World app is installed, it is possible to see every recipe in advance and find suggestions.

In such cases, no food group or the most similar food group is selected. The best before date can also be set individually.

Yes, on the ZWILLING website. 

The app uses push notifications to remind you that the recommended best before date has been reached or passed. The scanned items are not automatically deleted. This must be done by the user.
