Pancake with chocolate and fresh fruits

Nature's enchanting play makes everyone fall in love with Germany's countryside, not less than its cities, castles and culture. The culture is strongly defined by crafts, tradition and good food. The kind of food you want to bring to the table when you sit together with family and friends. We went on a culinary journey with the food blogger Meike Peters from eat in my kitchen and collected inspiring recipes. Marta Greber creates great recipes on What Should I Eat For Breakfast Today? and shared this delicicous dish with us.

Pancake with chocolate and fresh fruits

Inspired by Marta Greber, Blog "What Should I Eat For Breakfast Today?"

Ingredients

Serves 4

For the Pancake

180 g (¾ cup) butter
220 ml (1 cup) milk
4 eggs
240 g (1 cup plus 2 tablespoons) all-purpose flour
¼ teaspoon fine sea salt

For the topping

200 g (7 ounces) milk chocolate, melted
150 g (5.5 ounces) mixed fresh berries (such as apples, pears, blueberries or blackberries)
Mint leaves for serving
Confectioners' sugar for serving

Preparation

Preheat the oven to 425°F (220°C).

In a medium bowl, whisk the milk, eggs, flour, and salt until smooth.

Add the butter to an ovenproof 10-inch (26 cm) cast iron skillet and place in the oven until the butter starts sizzling. Remove cast iron pan from the oven and carefully pour the batter into the pan.

Transfer the pan back to the oven and bake at 220°C/425°F for approx. 20 min. or until the pancake is golden brown, fluffy and the edges have puffed up.

While the pancake is baking, cut the fresh fruit as desired. Remove cast iron pan from the oven and drizzle with melted milk chocolate. Top with fresh fruits, mint, and confectioner’s sugar. Serve immediately.

What Should I Eat For Breakfast Today? is the name and credo of Marta's popular food blog. She focuses on the meal that combines two things that she loves: coffee and precious time spent with her husband. Breakfast used to be the only time of the day that the young couple could plan and spend together. You might not know where the day will take you, or if busy city life inspires you to eat out, but you can always plan the first meal of the day. Marta's Dutch Baby is adored by her man and daughter for a reason: it's delicious, foolproof, and quick to prepare. The pancake baked in a skillet rises like a soufflé and turns into a stunner when you top it with seasonal fruit and melted chocolate. It's a simple recipe that becomes special when you want it that way. This seems to be Marta's view on life: everything can become special, if that's what you want.
