CUT ON THE RIGHT SURFACE

Always use a wooden or plastic cutting board. Wooden and plastic boards help to protect the cutting edge of the blade, meaning the knife will keep its sharpness longer. Never cut on a glass or granite board. These extremely hard surfaces will dull the cutting edge of your knife more quickly than a wooden or plastic board.

CLEANING YOUR KNIFE

Always clean your knife by hand as it's more gentle on the steel than the high humidity and detergents of a dishwasher.

WASHING & DRYING

Use a soft cloth or sponge and a little washing up liquid to clean your knife under the hot tap. Never use a scourer or wire wool. Hold the handle and clean from the back of the knife - never face the cutting edge toward your hand. Rinse and dry the knife and store away safely. Never leave a knife in a sink full of water and other utensils as you may cut yourself when reaching into the bowl.


SAFE KNIFE STORAGE

There are a number of ways to safely store knives which will also protect the cutting edge.

 

  • Knife Block - You can use a knife block that sits on the counter top. This is a popular way to safely keep your knives within easy reach. Many blocks can also house a honing steel and scissors.
 
  • Magnetic Bar - A magnetic bar fixed to a wall is a great way to visibly store knives whilst keeping your kitchen counter top clear. Always place the knives handle down and tip up so it's safe and easy to reach for the handle of the knife you want.
 
  • Knife Case - These tend to be used by professional chefs. A knife case is a safe way to transport your knives and should be used with knife sheaths which protect the cutting edge of the blade.
 
  • Knife Sheath - If you keep your knives in a drawer, then you should use a knife sheath to protect the blade, and your hands. The cutting edge can chip or dent when clashing against other utensils in the drawer, so sheaths are a great value way to keep your knives in pristine condition. Never keep knives loose in a drawer without covering the blade with a sheath.
